History:
The “First Fruit Ceremony” is usually a very elaborate ritual. In the Ngoni community of the eastern province of Zambia it is called “inowala”. At this ceremony people dance, chat, eat and perform war dances in their flamboyant feathers, fowls and beads. Before anybody eats or drinks they slaughter a black bull. The meat is roasted and served to the paramount chief, his subordinates and the rest of the community. The people at this ceremony offer different types of farm produce to the king who later declares to the people that “the farm produce is ready to be eaten, let’s eat”. The main food of the day (a drink) is called Mukhoyo-Thobwa, which is prepared from Mukhoyo roots.

Ingredients:
Mukhoyo roots
Mealie meal
Water

Directions:
Boil water and add mealie meal – stir as ifyou are making porridge. Put the porridge down to cool after it is cooked. Add the Mukhoyo roots and leave for the next day. Take the roots out and leave it to ferment. The drink is ready as soon as it is fermented. This is drunk as refreshment for the function.
